Ingredient Spotlight: Tortillas

We love tortillas around here!  99% of the time we make homemade tortillas, and store them in the freezer for quick lunches and dinners.  Get our recipe and directions for homemade tortillas here.

With today’s ingredient spotlight focusing on tortillas, here are some of our favorite ways to use them:

Spinach & Mushroom Quesadillas – Of the quesadilla variety, our favorites are a split between these spinach, garlic, mushroom and Monterrey Jack cheese goodies and the veggie variety below.  Get the recipe here

Zucchini Carrot & Black Bean Quesadillas – In the summer months, I can’t get enough of these quesadillas.  Seriously.  With these, it’s no longer hard to eat your veggies!  Get the recipe here

Potato, Pepper and Egg Wrap – For breakfast in the morning or at night, these wraps are super fun, filling and delicious.  Serve with salsa for an extra special treat.  Get the recipe here.  If you’d rather just have eggs, try this quesadilla instead.  Recipe here.

Simple Chicken & Veggie Wrap – A delicious summertime lunch using leftover grilled chicken and a host of sautéed veggies.  Get the recipe here

Baked Chicken Tacos – Looking for a creative way to use up leftover chicken?  These baked tacos were always a highlight for me as a kid.  Get the recipe here

Baked Pepperoni Pizza Rolls – This is such an easy dinner and super fun too!  Fill the tortilla with your favorite pizza toppings, roll it up and bake.  Get the recipe here
