What a treat to come home from a busy week on Friday night to see that my husband had prepared Remy’s Ratatouille for dinner! He scored eggplant at the grocery store for 88 cents, and this is our favorite way to use it. Get the recipe here.
Our other menu highlight for the week was a new recipe – a spaghetti braid. Yum-o. And, the perfect way to use up leftover spaghetti. Recipe coming soon.
This week we’re pulling out some old favorites, and trying some new ones!
To do: Make muffins, thaw Italian sausage
To do: cook sweet potatoes in the crockpot, make puree, slice mushrooms
Granola & dried cherries
To do: Dice veggies for soup
To do: start bread in bread machine by 3pm, make muffins
To do: Start potatoes in small crockpot, start pulled pork in large crockpot, thaw chicken & English muffins.
