Menu Plan–December 2

We welcomed December in style – Christmas concert on Friday night, Christmas tree decorating on Saturday and the Holidazzle Parade on Saturday night.  Now that December is here, we are ready to celebrate. 

This week is the last week of our fall semester.  It’s a bittersweet time for me, as there’s always excitement about the end of the term, but I do love my students this semester and will miss them a lot.  They have been such a blessing to me. 

Soup week was a hit around here last week – with the highlight going to a new soup adapted from Brenda’s blog

This week, lots of veggies are on the menu:

Apple Danish {leftover}
Zucchini, Carrot & Black Bean Quesadillas, asparagus
Cheesy Chicken and Ranch Casserole, broccoli

To do: Make granola, caramels, chex mix; brown sausage

Waffles of Insane Greatness, maple apple sauté
Crockpot Busy Day Soup, garlic bread

To do: Thaw squash (am), make squash bake

Apple Cranberry Granola
Leftover soup
Make-Ahead Butternut Squash Pasta Bake, mixed veggies

To do: Prep for Christmas party

Wednesday {Christmas Party!}
Waffles of Insane Greatness {freezer}
Leftover pasta bake
Slow-Cooker Tuscan Chili {new}, French Bread
Bible Study Party: Popcorn, Andes Mint Fudge {new}, Hot Chocolate, & Caramel Cranberry Chex

To do: Nothing

Potato, Pepper & Egg Wrap
Bacon & Cheese Lentil Pie {new}, mixed veggies

To do: Soak lentils for dinner, make muffins

Berry Banana Muffins
Mushroom & White Bean Soup {new} or Rice & Broccoli Bake {new}

To do: Thaw ground chicken for soup

Clean out the fridge
Crockpot Chicken Chili
