Some cheeses grate better if frozen for a few minutes. I'm looking at you, mozzarella!
I freeze most of my cheese, so when I grate it it just sorta crumbles.....and that's easy. :-) But I have a tendency to grate my fingers so I have to wear an Ove Glove when I shred anything. Cooking hazard. ;-)
I always freeze mozzarella cheese, it just crumbles when defrosted, perfect for pizza :o)
